Dining at Black by Ezard, The Star

BLACK by Ezard promises a dining experience like no other, from the glamorous interiors to fish poached in Hawaiian waters. So it’s of little surprise that BLACK by Ezard at The Star has become a Sydney institution – and boasts a hat to boot.

Teage Ezard is the culinary mastermind behind the American and Australian influenced modern grill and steakhouse. Ezard is also the man behind two hatted Ezard and Gingerboy in Melbourne. For his first Sydney venture, he teamed up with James Audas to create a drink list with a strong American focus.

BLACK by Ezard is decadent and luxurious, but above all it is dramatic. There’s the inviting bar, impressive open kitchen and stunning floor-to-ceiling glass windows overlooking Pyrmont Bay. The restaurant is also fitted out in woods, copper and leather creating a dark, intimate and moody space.

The dining experience is equally glamorous, starting with a complimentary mini brioche loaf served with a side of butter and volcanic black salt. And the staff is more than happy to inevitably provide more. It’s so good you’ll want seconds and then thirds.

Surprisingly, one of BLACK by Ezard’s most popular dishes is an appetizer. The Farm Egg is a thing of textural beauty featuring a slow cooked farm egg encased in a crisp layer of pastry with a rich potato and leak cream, touches of white truffle oil and a thin papery slice of jamon iberico.

For the main event, choose from grass fed Angus, grain fed Angus, ration fed Wagyu and grain fed Wagyu. All sous vide and then finished off on a woodfired grill. To share, try their whole organic fully boned chicken, with smoked tomato and corn salsa. Alternatively, you can order seafood poached in Mahalo seawater drilled from below the ocean bed of Hawaii (we aren’t kidding).

To cap off the meal, you’ll want to prepare your cameras for the Chocolate, a semi-hollow chocolate sphere filled with peanut butter mousse and ice cream. Warm couverture chocolate is poured over the sphere and reveals the actual dessert, ganache with peanuts, banana sorbet and cookie crumble.

Ultimately, BLACK by Ezard is a show itself. And while there is no doubt the food is impeccable, it is the over the top experience that makes BLACK by Ezard worth every penny.
