WHAT! A whole day dedicated to duck!
Bishop Sessa, located in Surry Hill’s have introduced Whole Duck Wednesday’s. Yes, you read correctly. Every Wednesday, a set menu is designed and centred around duck. You get unforgettable food and perfect service for only $49pp.
To start the evening, parmesan sablé, capsicum and baby basil. A french savoury shortbread filled with flavour, it crumbled in my mouth. It was just as satisfying (if not more) than its sweet sablé counterpart. Accompanied by crispy potato skins, seaweed aioli and nori salt, it was a plate full of powerful flavours that left you wanting more.
Now for the start of the duck extravaganza. Duck leg croquette, smoked duck ham, duck liver parfait, pear and pickled enoki.
Where to begin. This dish was sublime. Along with the smoked duck ham (a tease for those ham lovers), it was paired perfectly with the liver parfait. The smokiness was not overpowering and the saltiness was just right for the pallet. On the other side of the dish, a duck leg croquette. Crunchy on the outside and full of flour on the inside, it effortlessly melted in the mouth along with the sweetness of the pear and pickled enoki. Not a crumb was left on the plate.
Next, the wonderful waitress presented the main dish of the night: Lavender and molasses glazed whole roast duck along with broccolini, carrots, sorrel and onions glazed in citrus with a side of rhubarb sauce.
It was then carved and plated for us to enjoy, and that we did. Every piece was distinct and the extra flavours that came with the glazed vegetables and sweet sharpness of the rhubarb sauce, were evident in every bite.
We cannot forget that with every meal, an accompaniment of wine will only enhance every bite and experience of the evening. Paired to every dish, it was a magnificent night. Thank you Bishop Sessa for a night worth every penny.
