Oysters and Bubbles at Pei Modern, Four Seasons Hotel Sydney

Another trip to the chic and popular Pei Modern was very welcomed, especially to try their Oysters and Bubbles promo. Running until January 31st 2016, order a dozen Ewan McAsh Signature Rock Oysters for lunch or dinner and enjoy two glasses of sparkling wine.

Ewan McAsh Signature Rock Oysters $4ea

Sourced from only the best in Australia, these Sydney Rock oysters were incredibly fresh, shucked to order and served with a tangy vinaigrette and a glass of bubbles.

Stracciatella, grilled cucumber, baby peas and horseradish $14

To accompany our oysters we enjoyed this delightfully green salad. The fresh sweet snap of the peas and sprouts went hand in hand with the creamy stringy goodness of the stracciatella.

Roasted tiger prawns, caramelised yoghurt and vadouvan $28

A terrific dish full of aromatic spices and tantalising flavours.

The huge prawns were plump and juicy, staying tender on the grill and locking in all those sensational flavours with a light char. The spiced yoghurt balanced everything our leaving the palate with a clean taste.

Kingfish ‘ham from the sea’, pickled Piel Del Sapo melon $16

I must say I don’t think I’ve ever had cooked kingfish, usually opting for it fresh and flayed. The flesh was firm and moist with a lovely buttery taste. Lightly seasoned, it was nicely contrasted with the tang of the pickled melon.

Half ‘Pei-king style’ duck, onion soubise and fermented blueberries $45

Duck. Need I say more? Ok I’ll say a little bit more. This was delicious! The crispy crackly of the skin, the tender tasty meat, the flavoursome sauce. It was all phenomenal. Top dish. Get it.

Oyster Special

A very pleasant surprise was this oyster special. For those who love a little spice in their life, this was a treasure. The freshly shucked oysters are topped with a fermented green chilli emulsion, then finished with a tiny sprig of fennel flower. Tiny is all you need as a burst of flavours hit you as you slurp the oyster up. First the sweet liquorice taste from the fennel flower, then the sharpness of the chilli, followed by it’s heat. Delightful!

Roasted meringue, Kensington Pride mango and coconut sorbet $16

A dish that tastes as beautiful as it looks! Everything about this dish made me happy, from the fluffy crunch of the meringue, the sweet juicy mango and the creamy rich coconut sorbet. Finished with some zime zest for a little zing. Amazing!

Sorrel sorbet, white chocolate ganache, macerated cherries and honeycomb $16

A refreshing and palate cleansing dessert, perfect for finishing our meal. The tart, sour green apple-like taste of the sorrel is very pleasant perking the taste buds with it’s subtle acidity, while the ganache perfectly balances the flavour. The cherries add a nice hit of sweetness while the honeycomb ties it all up with its insatiable crunch.
