EXP restaurant is a culinary wonder situated in the heart of the extraordinary Hunter Valley. Specialising in fresh fine dining in a chic and casual setting, EXP’s food speaks for itself with options from Land, Sea, Earth and Sky coming from local suppliers ensuring a quality dish.
Potato gnocchi, egg, cheddar, peas
This dish totally blew my mind. Never have I had gnocchi made in such a way. The thick tubes of silky pasta were divine, especially when mixed with the rich creaminess of the perfectly poached egg and sauce. The scattering of peas and sprouts added a hit of sweetness to cut the heaviness.
House-made haloumi, carrot, olive, tarragon, cide
This generous block of home made haloumi was everything we expected it to be and more. Oozing in milky goodness, you could tell how excellent the quality of this was. The cheese didn’t go rubbery when it cooled down but stayed soft and supple. Matching the saltiness with the sweetness of the carrot was a good choice and brought a nice balance to the dish.
Petuna ocean trout, lemon, brown butter, capers, radish
A wonderfully fresh and vibrant dish in both looks and flavour. The soft silky slices of fish were contrasted with a crunchy scattering of puffed rice, salty capers and a zesty lemon butter sauce.
Sand Whiting, yoghurt, cucumber, quinoa, basil, fennel
Easily my favourite savory of the day, the whiting was simply presented allowing the fresh ingredients and flavours to speak for themselves. The firm flesh of the fish was deliciously flakey and buttery in the mouth. The yoghurt brought a nice clean taste to the dish accentuating the aromatics of the basil and fennel.
Milly hill lamb, beetroot, goats cheese, macadamia
A delicious dish of juicy cuts of lamb cooked to pink perfection. Matching with the classic beetroot and goats curd combo was a real winner bringing an earthy flavour to the mix. The light crunch from the macadamias added a nice texture to the dish.
Little Hill Farm Chicken, black garlic, native rice, cauliflower, sunflower shoots
A solid dish. The chicken was amazingly succulent and tender. Full of savory rich flavours, you could really taste that deep caramelized flavour of the black garlic. The native rice had a lovely al dente bite to it, as did the thin shavings of cauliflower.
Warm blue cheese, brioche, honey
A really wonderful surprise in a simple (looking) little brioche. This cute little honey smothered pastry encased a lusciously creamy and sharp liquid blue cheese centre. To say this was delicious is an understatement. This baby was easily my favourite of the day leaving a beaming smile on my face.
Malt custard, dark chocolate, meringue
This malt custard dessert was indulgently tasty. Between the crispy wafer and honeycomb shards and the soft malt centre this was a real winner of a dish.
Lemon Sponge Cake, ginger, milk, caramel
I myself am a more ‘cakey -desserts’ kind of guy so this was right up my alley. The soft lime sponge was like a flavourful cloud. The caramel was thick and decadent contrasting to the sharp and fresh ginger syrup.
I can’t express enough what a wonderful meal we had at EXP. The gorgeous setting only added to the friendly attentive staff and sensational food. If you’re ever in the Hunter Valley I would definitely suggest a meal here.
