We were lucky to see the launch and grand opening of Knafeh at the Smooth Festival of Chocolate at the Rocks this weekend.

So, what is Knafeh you say? Their recipe is their mothers take on the Middle Eastern dessert. Generally its a cheese pastry soaked in sweet sugar-based syrup however this version is much lighter. Described as a sweet cheese and semolina pudding, coated in a fine crumbing mix.
Once baked, the coating becomes crunchy and you’re left with an oozing centre. Pistachio and sugar syrup is then drizzled over the finished product. Cheesy. Hot. Sweet. A damn fine desert if you ask me!
