Beet Drop was quite unique. The glass was covered in sugar and as you continued to drink more, the flavour progressed. First sips were savoury, but then as I made my way closer to the bottom – sweet.

Apothecary is the new drinking experience situated in the entrance of Eau De Vie in Darlinghurst. Historical, an apothecary is a professional who formulates and dispenses remedies. Nowadays, this translates to Dr Phil (the eccentric Philip Gandevia) who created this 12 cocktail menu. Behind the bar you can see him mixing vials and beakers to create the perfect drinking concoction .

The cocktail menu is divided into four sections – ‘Down the Garden Path’, ‘What the Doctor Ordered’, ‘His and Hers’ and ‘Eau de Vie 3 Way’. You can order the drinks separately, or order a degustation of three cocktails starting at $60.

Drink Me – Alice in Wonderland reimagined. Cherry tart, custard, pineapple, turkey, toffee, buttered toast, fizz whizz

Situated on top is a pill. The idea is you pick up the pill, remove the lid and insert the pill into your drink. Unfortunately, and to my embarrassment, my partner pushed down on the pill without first removing the lid. The fizz whizz pill exploded all over the place, covering the table in white powder. Luckily Dr Phil was understanding…

Hot Retort – A warming, wintery concoction. Butter-scotched scotch, persimmon, peer, citrus, winter spiced agave, dandelion & burdock and chocolate.

Considering the shitty cold weather outside this drink was perfect! Easily my favourite out of the three I tried. It was warm and buttery with hints of spices. Served out of a volumetric flask then poured into a goblet. Fancy!

The Apothecary is a small 26 seater venue. An intimate space, with private curtained off booths, a communal table and a four seater. Dim lighting, exposed brick, wooden seating and dark leather fill the room. I will be making another visit soon to try the rest of the menu.
