With the Truffle Season upon us, the only sensible thing to do was to travel to Canberra and see how these amazing balls of black gold grow. But not before demolishing a truffle filled dinner first. This was conveniently located at Red Salt in the Crowne Plaza Canberra. Guest star and speaker of the night was the owner of French Black Truffles Canberra, Sherry McArdle-English, a lovely woman who has managed to produce some of the best truffles in Australia.
Pan Seared Scallops
As Sherry shared her incredibly inspiring and impressive life story we tucked into our starters, like these plump scallops and gnocchi covered in a truffle cream sauce. The sound of ‘Mmmmmm’s” and ‘Ahhhhhh’s’ were interspersed by Sherry explaining the intricacies of the black perigold truffle and why it’s smell is so intoxicating.
Roasted Pumpkin Soup
A great dish for those freezing winter nights, the soup was deliciously warming and sweet tasting of honey. The truffle really thrived in the warm soup giving off a heady aroma and a comforting taste.
Muscovy Duck Breast
Another great dish, the generous portion of duck certainly filled me up and if the duck didn’t do it the creamy buttery mash sure did. I particularly liked the black truffle jus which had a pleasent sourness to balance out the rich savoury flavours.
French Black Truffle Chocolate Cake
I never would have thought that Chocolate and truffle would go well together. The generous portion of cake was moist and airy with a grating of truffle on the top. I would have loved to have more truffle infused into this dish, perhaps even in the ice cream.
All in all, an absolutely fantastic night, that was fun filled and actually pretty educational. Best of all was the chance to actually hold, smell and see a real truffle in the flesh.
