Nestled in the back streets of Drummoyne is Copo Cafe & Diner. A bright and sunny two storey eatery that’s treasured by the locals. We decided to find out why.

French Toast with Berry Coulis, Mascarpone and Maple Syrup – 16

The two slabs of egg soaked bread act like a sponge soaking up the richly sweet flavours of the berry coulis and maple syrup. The mascarpone is excellent in balancing that adding a clean creaminess to the mix.

Hotcakes with Passionfruit, Mascarpone and Maple Syrup – 16

Soft and pillowy, thick and fluffy. I’ve actually never had hotcakes with passion fruit and after taking one bite I couldn’t imagine a world without them. A must try!

Moroccan Baked Eggs with Eggplant, Labne, Herbs and Toast – 19

I’m a sucker for baked eggs! The eggs on top create a crispy layer keeping the delicious eggplant mix underneath hot and moist. My favourite was scooping it all up with the crusty bread.

House Smoked Trout with Fried Egg, Potato Hash, Herbs and Toast – 19

A superb dish! The egg is cooked sunny side up with the yolk still runny making it perfect to mix in with the ridiculously good  smoked trout and hash.

After a great meal like this I could definitely see what keeps the locals coming back. Check out the upper deck for a perfect brunch in the sunshine.
