The Three Blue Ducks story begins with three mates. Sam and Chris were both Bronte locals with a passion for the surf. Mark, living in Sydney, had, an impressive resume working in many fine dining establishments including Tetsuya’s. All three met separately in Morocco whilst travelling and living overseas, and collectively met in Flims, Switzerland where they instantly hit it off. In March 2010, the idea of starting a restaurant together was thrown around between the three boys and in September 2010, Three Blue Ducks opened for business. They were busier than expected, and it grew from there…
Since then, the Three Blue Ducks extended and joined forces with Jeff (part owner of the Local Tap House in Darlinghurst and St Kilda), who owned a pizza store next door. This enabled the boys to increase their seating and introduce a bar area. Jeff selected the wine and beer on offer. To meet demand, the boys looked for chefs and Mark turned to Darren, ex Tetsuya chef and mentor to Mark. Darren soon became an extra addition to the Three Blue ducks, extending operating hours to dinner and increasing the calibre of the food.
